Kell hozzá:
- 3 pohár Nagyi Titka Búza Kenyérliszt (fehér)
- 1 tk porélesztő (Oetker instant)
- 1 tk só
- 1.5 pohár víz
- opcionálisan: magok; zab-/tönkölypehely; fűszerek (pl. kömény, bazsalikom, oregánó, rozmaring stb.); hagyma / olívabogyó / szárított paradicsom / bármi, ami eszünkbe jut és kenyérbe fincsi
Így készül:
- A lisztet átszitálom.
- A száraz hozzávalókat jól összekeverem.
- Apránként hozzáadagolom a vizet és addig gyúrom, míg szép ruganyos tésztát kapok. (Vigyázat, nem túlgyúrni!)
- Egy éjszakára lefedve pihentetem, hogy jól megkeljen.
- Másnap reggel a sütőt előmelegítem max. fokozatra.
- A szépen megkelt tésztát átgyúrom, hozzáadom a mago(ka)t/fűszer(eke)t/hagymát/stb.
- Egy forró, liszttel meghintett (semmi vaj, vagy olaj!!) fedeles jénaiban fedő alatt 30 percig sütöm, majd fedő nélkül 20-25 percig.
- Rácson hűtöm.
- Tiszta konyharuhába bugyolálva, vagy tiszta vászontáskában tárolom.

Today is 20th August, a national holiday in Hungary with a truckload of fireworks in the evening. We are celebrating St. Stephen, our first actual Catholic king -- and also the first harvest of the year with "New Bread".
On this lovely occasion, for the first time in my life, I decided to bake a bread. I received a very easy and promising receipt from my Mom, and gave it a shot. Now, how shall I put this... It turned out to be AWESOME!!
Ingredients:
- 3 cups of Nagyi Titka Bread Flour (white)
- 1 tsp dry yeast (Oetker instant)
- 1 tsp salt
- 1.5 cups of water
- optional: seeds; flakes; spices (e.g., cumin, basile, oregano, rosemary stb.); onion/ olives / dried tomatoes / whatever you'd think'd prove yummy if put into a bread (I added pumpkin seed, linseed and spelt flake)
Preparation:
- Sieve flour.
- Mix dry ingredients (flour, salt, yeast).
- Add water (half a cup at a time), and knead until your dough is springy (do not over-knead!)
- Let it rise for one night under a dish cloth.
- In the morning, preheat oven at maximum temperature.
- Knead the dough lightly, and add whatever you want (seeds, spices etc.).
- Sift flour into a pyrex/heatproof bowl with a lid.
- Bake the bread with the lid on for 30 minutes.
- Take off the lid and bake another 20-25 minutes.
- Let it cool on the grid.
- Store it wrapped in a clean dish cloth or a clean canvas bag.
